Tuscan Salad

Balsamic Vinaigrette

  • 1/3 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 3 tbps orange juice
  • 1/4 tsp salt
  • Freshly ground pepper to taste

Salad

  • 3 cups prewashed arugula
  • 3 cups prewashed baby spinach
  • 3 tablespoons slivered almonds
  • 3 ripe, but firm, strawberries, thinly sliced
  • 3 tbsp balsamic vinaigrette
  • 2 tbsp shaved parmesan

Directions

To prepare vinaigrette: Add oil, vinegar, orange juice and salt to a jar with a tight-fitting lid; shake well to combine.

To prepare salad: Combine arugula, spinach, almonds and strawberries in a large bowl; toss with 3 tablespoons of vinaigrette. Top with parmesan and plate immediately. Serves four.
